Our Head Chef
John Leighton, our Head Chef, joined the team at the Holiday Inn London – Stratford City prior to the London 2012 Olympics. John trained at the prestigious Donnington Valley Hotel and Spa in Newbury.
John’s passion for bringing an original twist to traditional recipes is being well received and enjoys being able to use quality locally sourced ingredients.
